Pacifically this server, when I drink a potion or eat an apple and go into my inventory, it doesn't show my time left on my effects. There's nothing at all. I go into single player, drink a potion and see my time left, even on other servers I see em. Just not here. What the heck is going on?

Use lunar or some client and turn on potion status
I guess you could test out different clients to see if the potions show up here, but other than that, I guess there isn't anything you can do about it and you could manually time your potion effects? I personally don't pay attention to the time and just feel the effects so its up to you.
