To put it simply: No, nothing changes
Reason:
There's a player.dat file in every server which stores individual player data.
Now when you buy a minecraft account you get an UUID which is unique to you. Mojang uses it to identify your account and so does the player.dat to store information about your player. Changing your minecraft name does not change your UUID, therefore doesn't really reset anything for you on the server. The server would always identify you by your UUID, no matter what you change your name to.
