I m thinking to use schematics to build my cactus farm but I heard that someone got banned by anticheat for using schematica . Anyone can explain how can I use it without getting ban by Anticheat ?

As long as you don't use anything that makes you auto-build the schemat, aka printer, you should be ok

What's the difference between schematica and printer ?

It's a type of thing to do at your own risk. Printer is essentially placing the blocks for you while using the schematic mode. Just disable the printer.
